"Snappy Corn Salad"

The top of the day to you.

You know sometimes it's just a pain to come home and try and put something together to eat that makes good healthy sense at times, especially after a 32-mile bike ride like I did today.

And I can imagine why so many people eat out when they work so late in the day and then to try and come home to prepare a meal. Yee gads!

Well it was a very windy day today and I was real tired when I got home. So I thought I really need to eat but if I dress up and go to some place decent to eat then it will be after 8PM before I eat and that is just too late to be sitting down to eat.

And I wanted to eat something fast and easy and energy gaining to boot. So here's what I fixed and it was a knock out plus a snap to prepare…in less than 10 minutes total.

INGREDIENTS:

One half pound of Snap Peas
4 ears of Raw White sweet Corn
10 Asparagus Spears

Remove the Corn from the Cob and put in the center of a salad bowl. Then wash the Snap Peas (in the shell) and peel the string off each one. Put the Snap Peas on one side of the Corn. Then after you wash the Asparagus Spears, break the bottom ends off each one and put them on the other side of the Corn.

This sounds too easy I know, but was a lot better than even I thought it would be. And by the way, this could be eaten either as a Noon Meal or an Evening Meal. Which ever you prefer.

Here's a little tip about selecting Corn. When you are looking at all that corn in the packages, get the ones that are the fullest on the Cob. Then feel the corn by running your fingers down the side of the Corn. The one that seems to be the crispest and doesn't give in any way, will be your freshest and usually sweetest.

Sometimes the BI-Color Corn is the sweetest and then lo and behold the White Corn is the sweetest. I've usually had better luck with the White Corn so that's the one I generally stick with. But without a doubt, the Yellow Corn is the gnarliest one of them all. And when you bite into either the BI-Color or the White Color Corn raw, you'll wonder to your self, why in the world do we ever cook it.

Any time I'm out to the Orange Grove and they have some Fresh Corn, I always get a couple ears right off the Stalk and get after it. It's just much too good to waste cooking it away.
