The top of the day to you.
I made this recipe tonight and thought wow, this would be great for this week's
recipe. It was so fast and easy and blew me away at how delicious it was.
INGREDIENTS:
4 medium size Yellow Summer Squash
3 medium size Zucchini Squash
Remove the stems and the small button at the bottom of the squash. Let steam
WHOLE for about 1 minute only. Then put them into the Vita Mix or your favorite
High Powered Blender for about 2-3 minutes blending them very smooth.
Put the mixture into a large soup bowl and it can serve 2 people. Now what
I did when I had this for my family when they were over was to grind up 4 ounces
of fresh pecans in a coffee grinder and sprinkle over the top of it.
This recipe could be the base for a Rice Stew by just putting the fresh rice
recipe into a dish and then pour the stew over it, without the nuts of course
because then it would be a bad combination for great digestion. Stir it up and
it becomes a great Noon Meal with some fresh Basil and Parsley over the top.
