Happy New Year everyone!
I have to tell you the holidays got a lot of things behind here in my office
and I wanted to get this Cabbage Roll recipe to you as it's worth flippin' and
dippin' for!
Ingredients:
- 10 lightly steamed Cabbage Leaves
- 4 ears Raw Sweet Corn
- ½ teaspoon of fresh minced Ginger
- 2 tablespoons of Fresh Peanut Butter.
In a mixing bowl, remove the corn kernels from 4 ears of Fresh Corn and sprinkle
½ teaspoon of fresh Ginger over it and stir 2 tablespoons of Peanut Butter
into the mixture and then scoop the mixture into the cabbage leaves. I couldn't
believe how good this was. You can serve them either at room temperature or
baked them for a minute or two to heat them up. It's your call! Happy Y2K!

PS My C/D of the Week would have to be Etta James "Life, love and the
Blues". She is definitely a veteran performer and an awesome one at that.
She did an old Sly & The Family Stone that rocks. And she had a Marvin Gaye
on there as well. It's just an excellent all around selection of music for your
