The top of the day to you

And what a day it has been so far. It's not often I intentionally wait till this time of the day (Monday morning) to write this message to you but this week's recipe is just SOOOO good that I wanted to be eating it as I was writing my message.

A great friend of mine, Stacey Rice and I drove over to Crescent City, FL where I buy the bulk of my organic oranges. They have 3 Organic Persimmon Trees. Since Stacey's son was out of town for the weekend that freed that time slot for us to do it up. The people at the grove hate the Persimmons and let them go to the birds if their friends don't come by and pick them. Well say no more as I'ma comin', sure enough.

We must have picked at least 6 bushels… 3 for each of us. (and I also picked up 4 more bushels of organic Valencia Oranges for that morning 1-2 quarts of FRESHLY Squozed, as they say in the sunny south, orange juice every other morning as I'm drinking fresh organic grape juice on the other mornings.) Life is so incredible when we take the time to embrace every moment.

And by the way, I would also like to thank Mike and Sandy Libbey from DeLand, FL for bringing me a bushel of the best ones money can buy. Organic and all premium persimmons right from their own persimmon grove. I put 2 of them in this noon lunch along with about 3-4 of the ones I picked with Stacey.

Now persimmons DO RIPEN after they are picked so watch out. You can freeze them and make incredible things out of them. One of my favorites is the persimmon ice cream. I'll share that one with you next week, but this week has to be a slam-dunk if I ever saw one.

It's called my sweet lunch. EVERYDAY at this time of year before I start introducing some starches into my diet after a hot summer without them, I eat this one everyday I'm home. It's a perfect Energy source and so clean on your body. When you eat this I'll guarantee that you will be filled with abundance of energy all day long. Well Honest to Pete, this is what is going on with these weekly messages. I was so sick quite a bit of my life and way overweight that all of this just gets that jazz out of your life once and for all so you can get more out of life. I couldn't imagine being sick with even a cold anymore as that would be just too aggravating to me and with 4 corporations I need to over see all the time, well it would be a real hassle.

INGREDIENTS:

3 Persimmons
6 Bananas
3 Dates

THE RECIPE:

In a large stainless steel or glass or wooden bowl, cut up 6 Bananas. Spoon the Persimmons out of the skin into the bowl. Chop up 3 Dates (removing the seed of course) and mix it up. Now this is SOO simple but so doggone good, one wonders why we didn't learn this in school or the like.

Give this a try and watch your endurance rise to the top. Persimmons are a short season so enjoy them while they're here, as you really deserve this great treat.

This is an ideal lunch and could also be a breakfast, but when you are eating figs & grapes for the first thing in the morning or orange juice to start with, then this will serve as a great lunch. Let me know what you think.

One hundred years from now it will not matter what kind of car we drove, what kind of house we lived in, how much money we had in our bank account or what kind of clothes we wore. What WILL really matter will be how much of a difference we made in this world and how much we lifted someone up along the way. And when we are healthy we can really make that difference. Because when we are not healthy, we become more of a bother to the ones we love than a benefit.

PS. I thought maybe you would like to know just a little bit about some of the more popular varieties of persimmons available to you.

FUYU PERSIMMON - JIRO ("Apple Persimmon") -- Medium size, flat shape, still hard when ripe, non-astringent. Cool or hot climate. Hardy, attractive tree, practically pest free. Fall harvest. 200 hours. Self-fruitful.

GIANT FUYU PERSIMMON Larger, not so flat as Fuyu. Crunchy when ripe like Fuyu. Sweet, flavorful, non-astringent. Easy to grow, cool or hot climates. Fall harvest. 200 hours. Self-fruitful.

HACHIYA PERSIMMON Large, deep orange-red, acorn-shaped. Hot summer required to mature the fruit. Sweet, flavorful, astringent til soft-ripe. Mature fruit can be frozen and thawed to ripen. Productive, ornamental. 200 hours. Self-fruitful.

IZU PERSIMMON Very sweet, tasty, non-astringent fruit ripens about three weeks before Fuyu. Medium to large size, round shape. Relatively small tree, good choice for backyard persimmon. Sometimes difficult to start from bareroot. 100 hours. Self-fruitful.

MARU PERSIMMON Medium size, orange-red, round fruit. Beautiful glossy skin. If cross-pollinated, flesh is dark cinnamon color and seeded. Very sweet, rich flavor, excellent quality. 200 hours. Self-fruitful.

NISHIMURA PERSIMMON Large, almost round fruit with sweet, juicy, non-astringent, chocolate-colored flesh. Ripens very early, about one month before Fuyu. 100 hours. Another persimmon variety required to pollinate.

TAMOPAN Large, flat-shaped fruit with thick, reddish-orange skin and light orange flesh. Flesh is astringent until soft-ripe. Vigorous, heavy-bearing tree. 200 hours. Self-fruitful.
