"Summer Squash with a Peanut Butter Sauce"

I was speaking in New York City a little while back and Cynthia & I went out to eat at her favorite Chinese restaurant. Got to tell you I was more than impressed with the incredibly diverse menu they had. I like to eat so this was a winner for me.

I ordered, as one of my dishes, the noodles with a peanut butter sauce and it was excellent. So I wanted to tweak it a bit and since Summer Squash is in season, I thought I'd try this week's recipe today with the Squash instead of the Pasta, as it's better for this time of year anyway. I shared it with the person who mows my lawn and believe me I didn't think I was ever going to get him back to work. He loved it and shared it with his wife….and on and on and on!

So I thought you'd really like this one, check it out.

INGREDIENTS:

6 Yellow Summer Squash
1 Vidalia Onion
2 stalks of Celery
1 Orange Bell Pepper
1 ounce of Extra Virgin OLIVE OIL
4 ounces of fresh ground Peanut Butter
One quarter teaspoon of Oregano
One quarter teaspoon of Basil
One quarter teaspoon Sea Kelp (or Sea Salt if that's all you got)

THE RECIPE:

First of all, in a stainless steel or glass skillet (I use the one with the glass top as it seems to hold the heat in better and it's easier to see what you are doing) put the OLIVE OIL and put the heat on a medium heat. Put the chopped Vidalia Onion in it and let it start slowly start to cook while you are washing the Celery off. Then cut the Celery into one-inch chunks and 1 Orange Bell Pepper into thin slices and put that into the skillet while sprinkling the one quarter teaspoon of Oregano and one quarter teaspoon of Basil all over the top of the mixture.

Now put the lid back on and for the next 2 minutes you can make the Peanut Butter Sauce and here's how you do that.

Take the 4 ounces of fresh ground Peanut Butter and put it into 4 ounces of hot (not boiling) Distilled Water and mix well with the one quarter teaspoon Sea Kelp.

Then wash the Yellow Summer Squash. Cut into thin slices with your cheese slicer (not the one with the little wire on it but the one that looks like a pie shaped gizmo) and put into the skillet for about another 1-2 minutes at max.

Pour this into a large salad bowl and pour the Peanut Butter Sauce over it and watch out. This will really satisfy any hungry person.

I have a friend, Gene Paige, who turned me onto this Mantra that I recite everyday about 5 times a day and it just makes sense. And it's out by my trampoline when I jump on it each day I see it to repeat OUT LOUD so my mind can hear it as well. Also there's one in front of me while in the bathroom each morning so I can get rid of the bad and let in the good. Also there's one in my car as well as my office as I'll stop work just to recite it each day. IT MAKES A BIG DIFFERENCE so you can enjoy the abundance you so rightfully deserve. Here it is:
