"Spring Corn Salad"
4-21-02

Top of the day to you

I'm sitting out in my backyard listening to the birds and watching the butterflies in abundance. It's hot and sunny and this is the time of year when I eat practically ZERO Grains. So my starch for the Noon Meal is what's in season of course and the fresh Corn is now in and as cheap as the dickens.

This recipe is a hum dinger if there was one.

I'd like to suggest that you eat a lot of raw foods at the beginning of the day and eat your cooked meal in the evening if it's possible. Now if this isn't possible because of some client relationships you're committed to for the Noon Meal, then by all means when you can (most likely the weekend) try this Corn Salad for your Noon Meal when you're home. And you can always brown bag this one, as it's a real blast of energy for a heavy workload.

Now this is going to be too easy that you'd think that you'd need to doctor it up a bit for flavor. But no, check it out!

INGREDIENTS:

2-3 Ears of Sweet Corn
1 Small Organic Carrot (if possible)
5-6 Broccoli Flowerets
4 Asparagus Spears
1 Stick of Celery

INSTRUCTIONS:

Now here's all you do. Cut the Corn off the ears into a salad bowl. Then with a cheese slicer that looks like a miniature piece of piece with the sharp edge in the middle run the Carrot across the blade which will make them into paper-thin slices. Do the same with the Broccoli Flowerets and the Celery Stick. Then with a knife, cut the Asparagus into one-quarter inch slices. Mix this all together and what a treat.

You don't need any oils like I showed you with a similar recipe a couple months ago. Also it needs absolutely no seasonings. The Corn is so sweet and you'll wonder why you ever cooked it all these years.

This will make a fantastic Noon Meal and could easy be for one person but if you would like to share it with someone, by all means. But if you need to make it a little bigger just add 1-2 more ears of Corn. Enjoy this one and I know you'll drop me a note when you do. It's so easy that you'd think there's got to be something you need to do to doctor it up when you are preparing it, but it's too sweet to mess it up.

One other little thing to ponder is that we are all healthy automatically by design and sick only by default. And one of the biggest things we can do to preserve our health is not to poison ourselves.

No one can cheat you out of ultimate success of your health but you.
You must choose the right actions that will lead you on to success.
You must set your own standards by eating good stuff so you'll always be tough.

Nothing meaningful happens by itself. It will all come your way, once you understand that you have to make it come your way, by your own efforts.

Only you can hold yourself back, or stand in your own way. Only you can help yourself. Not in time, place, or circumstances, but in you lies success of your health.

It's the same with the entrepreneurial side of our lives. You'd never wear a pear of raggedy clothes to a successful board meeting or if you were presenting a speech to an audience. It's really all up to us.

We are not garbage dumps with hairy lids. This is our corporate headquarters and we own 100% stock in a blue chip corporation. Don't sell your stock cheap; put a high price tag on it. I've been teaching this one principle for over 25 years… "Eat good stuff so you'll always be tough."

All my very best to you.
