"Mango Man's Minestrone Stew"

Before I get to the message this week, one of our Gold Inner Circle Members, Jolene Kaezmarek, from Wisconsin caught me on last week's message about the cheese slicer. I really thank her for that as I felt I'd better clear the air about that one right away as last week's recipe was especially good.

The correct cheese slicer is NOT the one with the little wire on it but rather the one that looks somewhat like a little "piece of pie server" that has a sharp edge in the center much like a cabbage grater would look like. And this really makes the difference as Jolene mentioned that when she tried the Wild Tabouleh the broccoli tops (seeds or pods whatever is the correct name for those little critters at the top of the head of broccoli??? This "piece of pie shaped" cheese slicer takes the total mess out of it and makes it three times quicker to complete. Thanks Jolene.

Well I got to tell you a great friend of mine of 28 years, Dick Castle is back in Florida and we went out to eat at one of my favorite Italian restaurants tonight as he is Italian so I thought it would be apropos.

They serve a mean Minestrone Soup but nothing like my Minestrone Stew. When you try this you'll probably say the same thing…"Boy Howdy!"

INGREDIENTS:

- 2 Tablespoons of Brown Rice
- 1 Tablespoon of Millet
- 1 Tablespoon of Barley
- 4 Cups of Distilled Water
- 1 Cup of chopped Celery
- 2 Tablespoons of White Beans
- 1 cup of Pasta Shells
- One quarter pound of Green String Beans
- 2 Cups of Cabbage cut into large pieces
- 1 Cup of Carrots cut in 1 inch pieces
- 2 Red Bliss Potatoes cut into 1 inch pieces
- One quarter Teaspoon of Sea Kelp Powder
- One half Teaspoon of Oregano
- One half Teaspoon of Parsley
- One quarter Teaspoon of Black Pepper or Cayenne Pepper

Here's how to make this one.

Put the 4 Cups of Distilled Water in a large cooking pot and bring to a boil then add the:
- 2 Tablespoons of Brown Rice
- 1 Tablespoon of Millet
- 1 Tablespoon of Barley
- 2 Tablespoons of White Beans with the
- One quarter Teaspoon of Sea Kelp Powder
- One half Teaspoon of Oregano
- One half Teaspoon of Parsley
- One quarter Teaspoon of Black Pepper or Cayenne Pepper

Let this boil for exactly 2 minutes and turn down to lowest heat. After 20 minutes add the:
- 1 Cup of chopped Celery
- 1 cup of Pasta Shells
- One quarter pound of Green String Beans
- 2 Cups of the large pieces of Cabbage
- 1 Cup of the 1 inch pieces of Carrots
- 2 Red Bliss Potatoes pieces

Let simmer for another 45 - 60 minutes or to desired texture. Serve with some Millet Toast and Olive Oil. This is enough for 3-4 people depending on how many people you have at the table like me and in that case it's good for two people.

Enjoy this. This is an honest-to-goodness fill you up Noon Meal and nutritious as the dickens.
